Sunday Casseroles: Beef & Balsalmic Casserole

Remember I said I don’t have energy or time to cook after work? After school is manic, running kids here, there, and everywhere for sporting activities. Well, casseroles are my answer! This will change your life!

I introduced Casserole Sundays into our lives. Yep, every Sunday, I make a casserole when I have time to lounge around home and allow an hour or so for food to cook in the oven. Cooks enough for us to eat Sunday and Monday nights – and often, there is some to left over to freeze as well. I can’t understand why more people don’t make them. I want to shout this secret out to the world.

Casseroles are great because they are a conglomeration of vegetables and meat. You basically throw all your ingredients into the pot and place in the oven. Couldn’t be any easier. Using meat, potatoes and an assortment of vegetables makes a balanced, tasty, nutritious meal. I usually serve it with rice, or if I don’t have the energy to make rice after work, with buttery toast – no fuss!
